Our culinary philosophy is rooted in provenance. Each restaurant draws from the ecosystem around it: gardens tended by the chefs who cook from them, fishing boats whose daily catch appears on the menu by evening, and wine lists that tell the story of the soil beneath your chair. We have twelve Michelin stars across six kitchens, but what we are most proud of is something that cannot be awarded — the feeling of a meal that felt made just for you.

Clay is the restaurant that put Hudson Valley on the culinary map. Chef Nora Blaine grows much of what she cooks on the surrounding 600 acres — heritage vegetables, rare grain varieties, herbs gathered that morning — and fires everything in a custom wood oven built from local stone. At the heart of Lyla Farm, the Fire Lounge surrounds an open central hearth that burns from dusk until the last guest decides to call it a night. Just above the waterline at Hanalei Bay, the Kai Bar is the social heart of Lyla Kauai after dark. Tiki-inspired cocktails meet serious tropical spirits — the rum list alone spans 80 expressions — and on full moon nights, the bar serves until the last torch burns out on the beach. A live Hawaiian trio plays most evenings from sunset.
